Gastronomic Gifts – Cacao, Date and Almond Truffles

What could be nicer than making some delicious presents for loved ones that will also do them good?

Cacao nibs are packed with antioxidants, even more than blueberries and goji berries. They are also magnesium-rich, which is good for your nerve function and helps to keep your heart rhythm steady. Plus you can get six per cent of your daily iron intake in just 25g of cacao nibs. Makes about 20 truffles.

To make these cacao, date and almond truffles, put 100g organic raw cacao nibs into a food processor and whiz until they are well ground – but still retain some texture. Add 50g whole almonds and blitz again until finely chopped, then add 120g pitted dates and process until it all comes together.

Scoop out the mixture and divide it into about 20 truffles. Roll each one in the palm of your hand into a neat ball.

Tip a little cocoa onto a plate and roll half the truffles in it to coat. Roll the remaining ones in the coconut – you will end up with a light dusting rather than a heavy coating as it won’t all stick. Sit them all on a sheet of greaseproof paper and put them in the fridge to chill. Eat within two weeks.
